Pakistani Chicken Curry (Desi Murgh) - The chicken in this delicious dish from
Pakistan is simmered with onion, garlic, ginger, tomatoes, yogurt, a little chili,
turmeric, cumin, coriander, cardamom and cloves.

Royal Chicken in Silky White Almond Sauce - This subtly flavored   Moghul
dish from the North gets its name from the appearance of the sauce, not the
texture of it.  It's a nice blend of onions and almonds, coriander, cardamom,  red
pepper and yogurt.  Served with Patiala Pilaf or Cold Minted Potatoes.

Lamb Braised in Yogurt Cardamom Sauce -  More classic Moghul cuisine. The
lamb is gently braised in a cumin and green cardamom laced yogurt sauce. This
Pasanda is usually reserved in India for special occasions.

Lamb Curry Kashmiri Style (Rogan Josh) - Our menu would not be complete
without our own version of the classic Rogan Josh. This earthly lamb curry is
    aromatic with fennel and cardamom.

Pork Vindaloo - This wonderful Indian stew of Portuguese ancestry is full of
flavors – hot (but not too), sweet, spicy, and pungent – that all come together in
a tantalizing dish.  You’ll want lots of Basmati rice with this.

Bangla Slow-Cooked Beef with Onions - This Bhoona is a succulent dish of
beef and onions simmered in a broth of black mustard, cumin, fennel, fenugreek,
nigella, turmeric, coriander, cassia, garlic and ginger. Add in a few green chiles
and some fresh lime juice, and "Wow!"

Roast Duckling in Red Curry Sauce - Instead of an older duck with the bones
still attached to the meat, we roast a duckling for this dish, and remove all skin and
bones.  A bit labor intensive, but well worth it. Pineapple and tomatoes help this
dish simmered in a slightly sweet, slightly hot coconut milk sauce.

Chicken Curry -  ClassicThai comfort food at its finest.  Dark Meat Bone-In
Chicken Pieces with Lemon Grass, Garlic, Shallot, Galangal, Chili, Coriander,
Kaffir Lime Leaves, Cumin, Cinnamon, Mace, Turmeric, Cardamom, and more!!!

  Fusion Chicken -

Aubergine and Sweet Potato Stew with Coconut Milk  (vegetarian) -  Scented
with fragrant lemongrass, ginger and lots of garlic, this is a particularly good
combination of flavors. Aubergines (eggplants) and sweet potatoes go well
together and the coconut milk adds a mellow note.

Green Pea Curry with Paneer Cheese  (vegetarian) - This is a version of the
Indian vegetarian class, matter paneer.  Tomatoes, onions, fresh Indian-style
cheese and a handful of herbs and spices transform green peas from cafeteria
fare into an exciting, lightly sauced vegetarian dish.

Royal Vegetable and Rice Casserole (vegetarian) - This biriyani is the most
elegant of the vegetarian dishes. Fresh vegetables cooked with a cardamom nut
sauce are folded into Basmati rice.
